Ingredients

  • 12 slices Pepperidge Farm sandwich bread
  • 2 cups cubed cooked chicken
  • 3 hard boiled eggs
  • 4 oz. sliced mushrooms
  • 1/4 cup chopped olives
  • 1 cup mayonnaise
  • 2 Tbsp chopped onion
  • 1 cup cream of chicken soup
  • 1 cup light sour cream
  • 2 Tbsp sherry

Instructions

  1. Butter a 9x13 casserole dish. Butter bread on both sides and place six slices in the bottom of the casserole dish.
  2. Combine cubed cooked chicken, sliced or chopped hard boiled eggs, sliced mushrooms, chopped olives, mayonnaise, and chopped onion. Spread this mixture over the bread layer.
  3. Cover with the remaining slices of buttered bread.
  4. Mix together cream of chicken soup, sour cream, and sherry. Spread this topping evenly over the casserole.
  5. Bake in a 325-degree Fahrenheit oven for 30 minutes until heated through and bubbly.
