Ingredients

  • 3 cups crumbled 2-day-old cornbread
  • 3 cups toast
  • 2 cups chicken stock
  • 1/4 cup vegetable oil
  • 1/2 cup chopped parsley
  • 1/2 cup chopped celery
  • 1 cup chopped onion
  • 1/2 cup chopped green onions
  • 1/2 teaspoon crushed dried mint
  • salt and pepper to taste

Instructions

  1. Preheat oven to 325°F.
  2. Mix cornbread and toast in a large bowl. Pour in chicken stock and set aside.
  3. In a skillet over medium heat, heat vegetable oil and sauté chopped parsley, chopped celery, chopped onion, and chopped green onions until the onions are clear.
  4. Pour the sautéed vegetables into the bowl with the bread mixture.
  5. Add crushed dried mint, salt, and pepper; mix well.
  6. Pour the mixture into a greased 9 x 9-inch casserole dish or stuff a hen or turkey.
  7. Bake for 60 minutes or until the bird is done.
