Ingredients

  • 1 Tbsp. oil
  • 1 1/2 lb. chicken thighs, skinned, boned, and cut into 1/2 inch pieces
  • 1 medium onion, chopped
  • 1/2 c. uncooked long grain rice
  • 2 (16 oz.) cans stewed tomatoes
  • 1 (14.5 oz.) can less salt chicken broth
  • 1 3/4 c. chicken broth
  • 1 1/4 c. water
  • 1 (15.5 oz.) can red beans, rinsed and drained
  • 1 to 2 Tbsp. chili powder
  • 1/8 tsp. salt

Instructions

  1. Heat oil in a Dutch oven over medium-high heat.
  2. Add chicken and cook 5 to 8 minutes until lightly browned, stirring frequently. Add chopped onion.
  3. Cook 3 to 5 minutes until onion is crisp-tender.
  4. Stir in stewed tomatoes, chicken broth, water, red beans, chili powder, salt, and pepper.
  5. Bring to a boil.
  6. Reduce heat to medium, cover, and cook for 20 to 40 minutes until rice is tender and chicken is no longer pink.

Tips & Substitutions

For a richer flavor, consider adding a teaspoon of smoked paprika or cayenne pepper for some heat. If you prefer, substitute brown rice for white rice, but adjust the cooking time accordingly, as brown rice takes longer to cook. You can also use leftover cooked chicken to save time; just add it later in the cooking process to heat through. This dish can be made vegetarian by using beans and vegetable broth instead.

Serving Suggestions

Serve the chili hot, garnished with fresh cilantro or green onions for added flavor. It pairs beautifully with cornbread or a side salad for a complete meal. You can also offer toppings like shredded cheese, sour cream, or avocado slices. For a delightful twist, try serving it alongside the Glazed Chicken Breasts And Rice for a comforting dinner experience.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm it on the stovetop over medium heat, adding a splash of broth or water if the chili has thickened too much. You can also microwave it in a covered bowl, stirring occasionally until heated through.
