  • 1/2 cup chopped spinach
  • 8 oz cottage cheese
  • 2 eggs
  • 1/4 cup Parmesan cheese

  • 6 skinless, boneless chicken breasts

Instructions

  1. Combine chopped spinach, cottage cheese, beaten eggs, Parmesan cheese, pepper, Italian bread crumbs, garlic powder, finely chopped mushrooms, and half of the mozzarella cheese.
  2. Place chicken breasts on waxed paper and flatten each piece.
  3. Spread the mixed ingredients on top of each flattened chicken breast.
  4. Roll each chicken breast up jelly roll style and place seam side down in a 9 x 13-inch baking dish coated with melted oleo.
  5. Cover and bake in a 375°F oven for 1 hour.
  6. During the last 10 minutes of baking, sprinkle with the remaining mozzarella cheese.
  7. Serve hot with cooked and drained spaghetti noodles.
