Ingredients

  • 1 can cream of chicken soup
  • 1 can Ranch Style beans
  • 1 small can chopped green chilies
  • 1/4 teaspoon chili powder
  • 1/2 cup Cheddar cheese
  • 1/2 cup chopped green onions
  • 1 package Jiffy muffin mix
  • 4 cooked chicken breasts

Instructions

  1. Mix cream of chicken soup, Ranch Style beans, chopped green chilies, chili powder, chopped green onions, and cooked chicken breasts in a saucepan and heat thoroughly.
  2. Prepare the Jiffy muffin mix as directed on the package.
  3. Stir 1/2 cup Cheddar cheese into the muffin batter.
  4. Pour the muffin batter into a casserole dish, pulling it up onto the sides to create a crust. Pour the heated chicken mixture within 1/4 inch of the edge of the crust.
  5. Bake at 350°F for 25 minutes until golden and bubbly.
  6. Garnish with additional cheese, green onions, and cherry tomatoes before serving.
