Ingredients

  • 6 chicken breasts, deboned, skinned, and cut in 1-inch strips
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 (14 1/2 oz.) cans plain stewed tomatoes with onion and green peppers
  • 2/3 c. picante sauce
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 2 cloves garlic, minced
  • 2 Tbsp. vegetable oil
  • 2 (15 oz.) cans pinto beans, drained
  • 1 tsp. cumin
  • sour cream
  • green onion
  • Cheddar cheese

Instructions

  1. Saute chicken, green pepper, onion, and garlic in oil until tender.
  2. Add stewed tomatoes, picante sauce, chili powder, salt, and cumin.
  3. Reduce heat and simmer for 20 minutes.
  4. Garnish with sour cream, chopped green onion, and grated Cheddar cheese before serving.
