Chicken Wild Rice

A hearty and comforting dish combining tender chicken, nutty wild rice, creamy soups, and crunchy almonds, perfect for family dinners and special gatherings alike.

Ingredients

  • 2 cups cream of mushroom soup
  • 4 chicken thighs
  • 1 cup Uncle Ben's rice
  • 2 cups long grain rice
  • 2 cups water
  • 1 cup cream of celery soup
  • 1/2 cup margarine
  • 1/2 cup almonds

Instructions

  1. Place long grain rice and Uncle Ben's seasoned rice in a buttered 9 x 13-inch pan.
  2. Pour cream of mushroom soup, cream of celery soup, and water over the rice mixture.
  3. Dip cut-up chicken thighs in melted margarine.
  4. Place the chicken on top of the rice mixture.
  5. Sprinkle the seasoning from Uncle Ben's rice over the chicken.
  6. Cover with foil and bake at 325°F for 1 hour.
  7. Uncover, sprinkle almonds on top, and bake for an additional 30 minutes.
