  • 3/4 cup cashews
  • hot cooked rice

Instructions

  1. Blend cornstarch and 2 tablespoons soy sauce in a bowl.
  2. Mix in chicken; set aside.
  3. Mix remaining soy sauce, wine, sugar, and vinegar; set aside.
  4. Heat oil in an uncovered wok at 375°F (190°C).
  5. When hot, add red pepper flakes; stir-fry until black, about 10 seconds.
  6. Add chicken; stir-fry for 2 minutes.
  7. Remove chicken with a strainer; set aside.
  8. Add green onions and ginger root; stir-fry for 1 minute.
  9. Add chicken back; stir-fry for 2 minutes.
  10. Add wine mixture; stir-fry for 1 minute.
  11. Stir in cashews.
  12. Serve hot with cooked rice.
