- Slice each chicken cutlet crosswise in half.
- Chop enough spinach to equal 2 tablespoons and reserve remaining to line the platter.
- Slice mushrooms into quarters.
- Season chicken with salt and pepper.
- Dredge chicken in all-purpose flour.
- Heat light corn oil spread in a skillet over medium heat.
- Cook chicken until golden and cooked through, about 4-5 minutes per side.
- Remove chicken and set aside.
- In the same skillet, add mushrooms and cook until tender, about 3-4 minutes.
- Pour in red wine and add chicken bouillon; simmer until slightly reduced, about 5 minutes.
- Add chopped spinach and cook until wilted, about 1-2 minutes.
- Return chicken to the skillet to coat with sauce.
- Serve chicken with spinach and mushroom sauce, garnished if desired.
