Ingredients

  • 3/4 lb chicken cutlets
  • 1 bunch spinach
  • 8 oz mushrooms
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • all-purpose flour
  • light corn oil spread
  • 1/3 cup red wine
  • 1/4 tsp chicken flavor instant bouillon

Instructions

  1. Slice each chicken cutlet crosswise in half.
  2. Chop enough spinach to equal 2 tablespoons and reserve remaining to line the platter.
  3. Slice mushrooms into quarters.
  4. Season chicken with salt and pepper.
  5. Dredge chicken in all-purpose flour.
  6. Heat light corn oil spread in a skillet over medium heat.
  7. Cook chicken until golden and cooked through, about 4-5 minutes per side.
  8. Remove chicken and set aside.
  9. In the same skillet, add mushrooms and cook until tender, about 3-4 minutes.
  10. Pour in red wine and add chicken bouillon; simmer until slightly reduced, about 5 minutes.
  11. Add chopped spinach and cook until wilted, about 1-2 minutes.
  12. Return chicken to the skillet to coat with sauce.
  13. Serve chicken with spinach and mushroom sauce, garnished if desired.
