Ingredients

  • 1/2 cup shortening
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup quick oatmeal
  • 1/2 cup Rice Krispies
  • 1/2 cup coconut

Instructions

  1. Sift flour, soda, baking powder, and salt together in a bowl.
  2. Beat shortening and white sugar together until well combined.
  3. Add brown sugar, egg, and vanilla; continue beating.
  4. Mix in the sifted dry ingredients.
  5. Stir in quick oatmeal, Rice Krispies, and coconut.
  6. Drop teaspoonfuls of the dough onto a cookie sheet.
  7. Bake at 375°F (190°C) for 10 minutes or until golden brown.
