Chili-Cheesy Rice

Ingredients

  • 1 cup chopped onion
  • 1/4 cup melted margarine
  • 1 cup cream style cottage cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 cups cooked regular rice
  • 3 (4 oz.) cans green chilies, drained, seeded, and chopped
  • 2 cups commercial sour cream
  • 2 cups sharp Cheddar cheese, shredded

Instructions

  1. Saute chopped onion in melted margarine until tender.
  2. Remove from heat.
  3. Add cream style cottage cheese, salt, and pepper to the onion mixture.
  4. Stir in cooked rice, drained and chopped green chilies, and sour cream.
  5. Spoon half the rice mixture into a greased 2-quart casserole.
  6. Top with half of the shredded Cheddar cheese.
  7. Repeat with remaining rice mixture and cheese.
  8. Bake at 375°F for 25 minutes until hot and bubbly.
