A hearty, flavorful chili corn chowder combining ground beef, corn, tomatoes, and chili spices, perfect for comforting meals and suitable for family gatherings or casual dinners.

Ingredients

  • 2 onions, diced
  • 1 green pepper
  • 1 Tbsp. margarine
  • 1 (16 oz.) pkg. frozen corn
  • 2 (16 oz.) cans chopped tomatoes
  • 1 lb. lean ground beef
  • 1 Tbsp. chili powder
  • 2 bay leaves
  • 2 (16 oz.) cans chili beans
  • 1 (6 oz.) can tomato sauce
  • salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot and drain any excess fat.
  2. Saute the diced onions and green pepper in the margarine until tender.
  3. Add all ingredients to the pot: cooked beef, sautéed vegetables, frozen corn, chopped tomatoes, chili beans, tomato sauce, chili powder, bay leaves, salt, and pepper.
  4. Heat the mixture to boiling, then reduce the heat and simmer, covered, for 30 minutes.
  5. Serve hot, garnished with grated cheese if desired.
