Ingredients

  • 10 eggs
  • 1 tsp. baking powder
  • 16 oz. small curd creamed cottage cheese
  • 1/2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1 lb. shredded Jack cheese
  • 1/2 c. melted butter
  • 1/2 c. diced chilies

Instructions

  1. In the bowl of an electric mixer, beat eggs until light and lemony.
  2. Add flour, baking powder, cottage cheese, Jack cheese, and melted butter.
  3. Blend until smooth, then stir in the diced chilies.
  4. Pour the mixture into a buttered 9 x 13-inch baking dish.
  5. Bake at 350°F (175°C) for 35 to 45 minutes until the top is browned and the center appears firm.
