Ingredients

  • 2 medium onions, diced
  • 1 small green pepper, diced
  • 3 Tbsp. oil
  • 1 1/2 lb. ground beef
  • 2 Tbsp. chili powder
  • 4 Tbsp. diced jalapeno peppers
  • 1/2 tsp. crushed red pepper
  • 1 can stewed tomatoes
  • 1 large can kidney beans
  • 1 small can tomato paste
  • cooked spaghetti or saltines

Instructions

  1. Saute diced onions and green pepper in oil on medium heat until softened.
  2. Add ground beef and cook until browned, breaking it up with a spoon.
  3. Stir in chili powder, diced jalapeño peppers, and crushed red pepper.
  4. Cook for 3 minutes to blend flavors.
  5. Add stewed tomatoes, kidney beans, and tomato paste, stirring to combine.
  6. Bring to a boil, then reduce heat to low and simmer for 2 to 3 hours, stirring occasionally.
  7. Serve the chili over cooked spaghetti or with saltines.
