Ingredients

  • 1/4 cup vegetable oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 lb. lean ground beef
  • 1/2 bell pepper, chunked
  • 1 (1 lb. 12 oz.) can tomatoes, partially drained
  • 1 tablespoon tomato paste
  • 1/4 cup chopped parsley
  • 1 teaspoon marjoram
  • 1 teaspoon crushed oregano
  • 1 teaspoon crushed cumin
  • 3 tablespoons chili powder
  • 2 teaspoons salt
  • 1 teaspoon red cayenne pepper
  • 1 cup Kahlua
  • 1 (1 lb. 11 oz.) can red kidney beans, drained

Instructions

  1. In a 4-quart pot, heat vegetable oil.
  2. Add chopped onions and minced garlic; sauté until soft.
  3. Add ground beef and cook until browned.
  4. Add chopped bell pepper, partially drained tomatoes, tomato paste, chopped parsley, marjoram, crushed oregano, crushed cumin, chili powder, salt, and red cayenne pepper; mix well.
  5. Add Kahlua to the mixture.
  6. Increase heat until the mixture simmers.
  7. Add drained red kidney beans.
  8. Simmer partially covered for 45 minutes.
