Chili Rellenos are flavorful stuffed roasted chilies filled with melted cheese, lightly battered and fried to perfection, making a delightful appetizer or main dish for cheese lovers.

Ingredients

  • 12 roasted, peeled Big Jim chilies
  • 12 pieces Monterey Jack cheese (3 x 1-inch)
  • 2 eggs, divided
  • 3/4 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • water
  • oil for frying

Instructions

  1. Make a slit in each chili and stuff with a piece of cheese.
  2. Roll each chili in flour and set aside.
  3. Beat egg whites until peaks form.
  4. Heat oil in a large, deep pan.
  5. Dip the floured chilies into the beaten egg whites, then fry in hot oil until golden brown.
