Chili Skillet

Ingredients
- 1 lb. ground beef ⓘ
- 1 c. chopped onion ⓘ
- 1/2 c. chopped green pepper ⓘ
- 1 garlic clove, minced ⓘ
- 1 c. tomato sauce ⓘ
- 1 can red kidney beans ⓘ
- 4 tsp. chili powder ⓘ
- 1 tsp. dried oregano
- 1 tsp. salt ⓘ
- 1/2 c. uncooked long grain rice ⓘ
- 1 c. canned or frozen corn ⓘ
- 1/2 c. sliced black olives ⓘ
- 1 c. shredded Cheddar or Monterey Jack cheese ⓘ
Instructions
- In a large skillet over medium heat, cook beef, onion, green pepper, and garlic until the meat is brown and vegetables are tender.
- Drain excess fat from the skillet.
- Add tomato sauce, kidney beans, chili powder, oregano, salt, and rice; cover and simmer about 25 minutes or until rice is tender.
- Stir in corn and black olives; cover and cook for 5 minutes more.
- Sprinkle shredded cheese over the skillet, cover, and cook until cheese melts, about 5 minutes.
