Ingredients

  • 1 lb. ground beef
  • 1 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 garlic clove, minced
  • 1 c. tomato sauce
  • 1 can red kidney beans
  • 4 tsp. chili powder
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/2 c. uncooked long grain rice
  • 1 c. canned or frozen corn
  • 1/2 c. sliced black olives
  • 1 c. shredded Cheddar or Monterey Jack cheese

Instructions

  1. In a large skillet over medium heat, cook beef, onion, green pepper, and garlic until the meat is brown and vegetables are tender.
  2. Drain excess fat from the skillet.
  3. Add tomato sauce, kidney beans, chili powder, oregano, salt, and rice; cover and simmer about 25 minutes or until rice is tender.
  4. Stir in corn and black olives; cover and cook for 5 minutes more.
  5. Sprinkle shredded cheese over the skillet, cover, and cook until cheese melts, about 5 minutes.
