Ingredients

  • 1 slightly beaten egg
  • 3/4 c. water
  • 1 (12 oz.) pkg. corn chips
  • 2 (15 1/2 oz.) cans chili with beans
  • 1 (20 oz.) can enchilada sauce
  • 3/4 c. chopped green pepper
  • 1/3 c. chopped onion
  • 2 c. shredded Cheddar cheese
  • 4 c. chopped lettuce
  • 2 c. chopped tomatoes

Instructions

  1. Heat oven to 350°.
  2. Mix egg and water.
  3. Crush corn chips.
  4. Add egg mixture to crushed chips.
  5. Spread in lightly greased 13 x 9-inch baking dish.
  6. Combine chili, 1 cup enchilada sauce, green pepper, and onion.
  7. Spread over corn chips in baking dish.
  8. Bake at 350° for 35 minutes.
  9. Top with cheese and remaining whole corn chips.
  10. Bake 5 minutes more.
  11. Top with lettuce and tomatoes.
  12. Serve with remaining sauce.
