Ingredients

  • 6 large tomatoes
  • 1 medium onion
  • 2 Tbsp. extra virgin olive oil
  • 2 cloves garlic
  • 1 c. chicken broth
  • 1/2 tsp. salt
  • 1/4 c. heavy cream
  • 1 c. fresh basil leaves

Instructions

  1. Wash tomatoes and place on a cookie sheet.
  2. Add onion halves and roast in a preheated 400°F oven for 20 to 30 minutes.
  3. Cool the roasted tomatoes and onions.
  4. Transfer tomatoes to a bowl, catching juices, then slip off skins and reserve juices.
  5. In two batches, puree tomatoes and onions in a food processor until very smooth.
  6. Heat 2 tablespoons of olive oil in a heavy soup kettle.
  7. Saute garlic until soft, then add pureed tomatoes and reserved juices.
  8. Stir in chicken broth and salt.
  9. Bring to a simmer and cook uncovered for 15 minutes.
  10. Remove from heat and stir in heavy cream.
  11. Chill the soup until cold.
  12. In a food processor, puree basil and 1/2 cup of olive oil to make basil oil.
  13. Serve the soup garnished with basil puree drizzled over each bowl.
