Ingredients

  • 4 medium zucchini, cut into 1-inch slices
  • 1 small onion, thinly sliced
  • 1/2 teaspoon curry powder
  • 1 (14 1/2 oz.) can ready-to-serve chicken broth
  • 1/2 cup half and half
  • 1/8 teaspoon salt
  • dash of pepper

Instructions

  1. In a 3-quart pan, combine zucchini, onion, and curry powder.
  2. Add chicken broth to the pan.
  3. Over medium heat, bring to a boil; then cover and simmer for 45 minutes.
  4. Blend the mixture until smooth.
  5. In a medium bowl, combine the zucchini mixture, half and half, salt, and pepper.
  6. Cover and refrigerate until serving, for at least 2 hours.
