Ingredients

  • 2 Tbsp. olive oil
  • 1/2 lb. mushrooms, sliced
  • 8 green onions, sliced thin
  • 2 tsp. crushed garlic
  • 1 Tbsp. freshly grated ginger
  • 1 c. chicken broth
  • 3 Tbsp. lime juice
  • 2 tsp. Worcestershire sauce
  • 1/2 c. evaporated skim milk
  • 24 large peeled and deveined shrimp

Instructions

  1. Heat olive oil in a large skillet; add sliced mushrooms and sauté for 1 minute.
  2. Stir in sliced green onions, crushed garlic, and grated ginger.
  3. Add chicken broth, lime juice, Worcestershire sauce, and shrimp to the skillet.
  4. Cook for 2 to 3 minutes or until the shrimp turn pink.
  5. Meanwhile, heat evaporated milk in a glass measuring cup in the microwave until bubbles appear around the edge (about 30 seconds).
  6. Stir the heated milk into the shrimp mixture.
  7. Serve immediately over rice or noodles.
