  • 3 or 4 Tbsp. soy sauce
  • rice, cooked ahead of time
  • 1/2 c. water
  • 2 eggs

Instructions

  1. In wok or frying pan, heat enough oil to cook chicken and stir-fry for 3 to 5 minutes.
  2. Remove the chicken from the pan and set aside.
  3. Add 1/2 cup water and sliced celery to the pan.
  4. Steam for 2 minutes until celery is crisp but tender.
  5. Remove celery from the pan and set aside.
  6. Warm the cashews in the same pan.
  7. Add the cooked chicken and celery to the cashews in the pan and stir to combine.
  8. Serve the chicken mixture over cooked rice.
  9. Optional: Add sweet and sour sauce for extra flavor.
