Ingredients

  • 3 cups chopped celery
  • 1 cup chopped onion
  • 3/4 cup chopped green pepper
  • 1 tiny can chopped pimientos
  • 1 can mushrooms
  • 1 can quartered water chestnuts
  • 1 package Chinese noodles
  • 1/2 cup water
  • 2 1/2 cups mushroom soup
  • 2 pounds cooked shrimp or cubed chicken breasts

Instructions

  1. Line a 9 x 13-inch pan with Chinese noodles.
  2. Saute chopped celery, onion, green pepper, mushrooms, pimientos, and water chestnuts; then place on the noodles in the pan.
  3. Mix mushroom soup with water and cooked shrimp or cubed chicken breasts, then pour the mixture over the vegetables and noodles.
  4. Add more Chinese noodles on top and sprinkle with chopped cashews.
  5. Bake in a 350°F oven for 30 minutes until heated through and bubbly.
