Ingredients

  • 1 cup chocolate bits
  • 2/3 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup corn syrup
  • 1/4 teaspoon peppermint extract
  • 1 3/4 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Melt chocolate bits in a double boiler. Remove from heat.
  2. In a large bowl, combine shortening, sugar, and egg. Beat until creamy.
  3. Mix in corn syrup, peppermint extract, and melted chocolate.
  4. Blend in flour, baking soda, cinnamon, and salt.
  5. Shape the dough into 1 tablespoon-sized balls. Roll in sugar.
  6. Place on an ungreased cookie sheet.
  7. Bake at 350°F (175°C) for 12 to 15 minutes.
