Ingredients

  • 1 1/2 cups boiling water
  • 2 cups chopped dates or raisins
  • 1 teaspoon baking soda
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder
  • 1 stick (1/2 cup) plus 1 tablespoon butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup sugar (for sprinkling)
  • Chocolate chips (for topping)

Instructions

  1. In a bowl, combine boiling water, chopped dates or raisins, and 1 teaspoon of baking soda; mix well and set aside.
  2. Sift together the flour, 1 teaspoon of baking soda, salt, and cocoa powder.
  3. In a mixer, beat the butter and 1 cup of sugar until smooth.
  4. Add the vanilla extract and eggs, one at a time, to the butter mixture.
  5. Gradually add the dry ingredients to the wet mixture and mix well.
  6. Stir in the date mixture until evenly incorporated.
  7. Pour the batter into a greased and floured 13 x 9-inch baking pan.
  8. Sprinkle 1/2 cup of sugar over the batter.
  9. Bake at 325°F (160°C) for 20 minutes.
  10. Remove from the oven; sprinkle chocolate chips and walnuts over the top.
  11. Return to the oven and bake for an additional 30 minutes.
  12. Allow to cool before cutting into squares. Refrigerate leftovers.
