Ingredients
- 1 1/2 cups boiling water ⓘ
- 2 cups chopped dates or raisins ⓘ
- 1 teaspoon baking soda ⓘ
- 1 3/4 cups all-purpose flour ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 cup cocoa powder ⓘ
- 1 stick (1/2 cup) plus 1 tablespoon butter ⓘ
- 1 cup sugar ⓘ
- 2 eggs ⓘ
- 1 teaspoon pure vanilla extract ⓘ
- 1/2 cup sugar (for sprinkling) ⓘ
- Chocolate chips (for topping) ⓘ
Instructions
- In a bowl, combine boiling water, chopped dates or raisins, and 1 teaspoon of baking soda; mix well and set aside.
- Sift together the flour, 1 teaspoon of baking soda, salt, and cocoa powder.
- In a mixer, beat the butter and 1 cup of sugar until smooth.
- Add the vanilla extract and eggs, one at a time, to the butter mixture.
- Gradually add the dry ingredients to the wet mixture and mix well.
- Stir in the date mixture until evenly incorporated.
- Pour the batter into a greased and floured 13 x 9-inch baking pan.
- Sprinkle 1/2 cup of sugar over the batter.
- Bake at 325°F (160°C) for 20 minutes.
- Remove from the oven; sprinkle chocolate chips and walnuts over the top.
- Return to the oven and bake for an additional 30 minutes.
- Allow to cool before cutting into squares. Refrigerate leftovers.
