Ingredients

  • 1 1/2 cups oil
  • 2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 3 cups apples, cored, peeled and chopped
  • 1 cup walnuts, chopped
  • 1 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat together the oil and sugar.
  3. Beat in the eggs one at a time.
  4. In a separate bowl, combine the flour, salt, cinnamon, and baking soda.
  5. Add the dry ingredients to the egg mixture and blend well.
  6. Stir in the vanilla extract.
  7. Fold in the chopped apples, walnuts, and raisins.
  8. Pour the batter into a greased or parchment-lined baking pan.
  9. Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before serving.
