Ingredients

  • 1 c. brown sugar
  • 3 well beaten eggs
  • 3/4 lb. white seedless raisins
  • 1 Tbsp. cinnamon
  • 1 c. butter
  • 1/2 c. milk
  • 6 slices candied pineapple
  • 2 c. chopped dates
  • 2 c. candied cherries
  • 7 c. pecan pieces
  • 1 Tbsp. soda
  • 3 c. plain flour

Instructions

  1. Cream the butter and brown sugar together until light and fluffy.
  2. Add the beaten eggs, flour, baking soda, milk, and cinnamon; mix until well combined.
  3. Fold in the raisins, chopped dates, candied cherries, candied pineapple, and pecan pieces.
  4. Line a muffin tin with paper cups and fill each cup about two‑thirds full.
  5. Bake at 250°F for 30 minutes, stopping as soon as a toothpick comes out clean.
  6. Let the cupcakes cool before serving.
