Festive and flavorful, these Christmas Fruit Bars combine nuts, dried fruits, and candied pineapple in a sweet, buttery batter, perfect for holiday gatherings and sweet cravings.

Ingredients

  • 2 c. broken pecans
  • 1 1/2 sticks oleo (butter)
  • 2 c. brown sugar
  • 3 eggs
  • 1 1/2 c. plain flour
  • 1 1/2 tsp. vanilla
  • 8 oz. chopped dates
  • 1 lb. crystallized cherries, cut in half
  • 1 lb. crystallized pineapple, in chunks

Instructions

  1. Sprinkle the broken pecans over a greased and floured 10 x 5 x 1-inch pan.
  2. Cream the oleo (butter) and add the brown sugar; continue creaming until well combined.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in the plain flour and vanilla; mix until smooth.
  5. Press the batter down over the nuts, wetting your hands to help spread it evenly.
  6. Spread the chopped dates, candied cherries, and candied pineapple over the batter.
  7. Wet your hands again and press down the fruit layers gently.
  8. Bake at 275° to 300°F for 50 to 60 minutes, until golden and set.
