Ingredients

  • 1 Tbsp. butter or oleo
  • 1 c. chopped red onion
  • 3 c. corn kernels
  • 1 large chopped pepper
  • 1 1/2 c. green tiny lima beans
  • 1 c. milk
  • 1 c. half and half cream
  • 2 (5 oz.) cans chunk ham, drained and flaked

Instructions

  1. Melt butter in a large pan.
  2. Add chopped red onion and cook slowly for three minutes.
  3. Stir in corn kernels, chopped pepper, green tiny lima beans, milk, and half and half cream.
  4. Bring the mixture to a boil.
  5. Reduce heat to simmer, uncovered, for 10 minutes.
  6. Add drained and flaked chunk ham and cook for an additional 5 minutes, or until thickened.
  7. Season with pepper and serve.
