Ingredients

  • 2 lb. ground beef
  • 1 (16 oz.) can peas
  • 1 (16 oz.) can corn
  • 1 cup cauliflower
  • 2 carrots
  • 1 large potato
  • 1 onion
  • 1 can cream of mushroom soup
  • 2 cups corn bread batter

Instructions

  1. Combine ground beef, potato, peas, corn, cauliflower, carrots, and onion in a large cast-iron skillet.
  2. Add mushroom soup, spreading evenly over the vegetable-beef mixture.
  3. Pour corn bread batter over all to create the topping.
  4. Place the skillet in a preheated 350°F oven and bake for approximately 45 minutes.
  5. Test the cornbread topping with a toothpick for doneness.
  6. Remove the skillet from the oven.
  7. Let stand for 10 minutes before serving.
