Ingredients

  • 1 cup quick oatmeal
  • 1 2/3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup oleo, softened
  • 3/4 cup sugar
  • 2 eggs

Instructions

  1. Mix oatmeal, flour, baking soda, cinnamon, salt, and baking powder; set aside.
  2. Cream oleo and 3/4 cup sugar until light and fluffy.
  3. Add eggs; beat well.
  4. Add oatmeal mixture and applesauce alternately to creamed mixture, beating until smooth after each addition.
  5. Pour batter into a lightly greased 9 x 5 x 3-inch loaf pan.
  6. Sprinkle with 1 teaspoon sugar and cinnamon on top.
  7. Bake at 350°F for 45 minutes.
  8. Cool in pan for 10 minutes.
