Ingredients

  • 1 c. shortening (butter flavored)
  • 1 c. granulated sugar
  • 1 c. brown sugar
  • 2 eggs
  • 2 tsp. water
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 c. uncooked quick oats
  • 1 c. butterscotch morsels
  • 1/2 c. coconut (flaked)
  • 1 c. chopped walnuts

Instructions

  1. Cream the shortening and sugar together until well combined.
  2. Add the beaten eggs, water, and vanilla extract; mix thoroughly.
  3. In a separate bowl, combine the flour, salt, and soda.
  4. Gradually add the dry ingredients to the creamed mixture, mixing well.
  5. Stir in the quick oats, butterscotch morsels, coconut, and chopped walnuts.
  6. Drop spoonfuls of dough onto an ungreased baking sheet.
  7. Bake in a preheated oven at 350°F (175°C) for about 10 minutes or until golden brown.
  8. Allow cookies to cool slightly before transferring to a wire rack.
