Ingredients

  • 1 cup Crisco shortening
  • 2 cups sugar
  • 5 eggs
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 1/2 teaspoons coconut flavoring
  • 1 can coconut
  • 1 c. sugar

Instructions

  1. Cream the shortening and 2 cups of sugar until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the creamed mixture, alternating with buttermilk, beginning and ending with the dry ingredients.
  5. Stir in the coconut flavoring and coconut.
  6. Pour the batter into a greased angel food pan.
  7. Bake at 350°F (175°C) for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
