- Combine 1 tablespoon flour with salt.
- Dredge beef sirloin strips in the flour mixture.
- Heat a skillet and add 2 tablespoons butter.
- When the butter is melted and hot, add the sirloin strips and brown quickly, flipping to cook all sides.
- Add sliced mushrooms, chopped onions, and minced garlic to the skillet.
- Cook for 3 to 4 minutes until the onion is barely tender.
- Remove the meat and mushrooms from the skillet and set aside.
- Add 2 tablespoons butter to the pan drippings.
- When melted, blend in 3 tablespoons flour and slowly add tomato paste.
- Pour in the beef stock or broth and stir until the mixture thickens.
- Return the meat and mushrooms to the skillet and stir in sour cream and sherry.
- Heat briefly until warmed through.
- Keep warm over hot water until ready to serve.
- Serve over hot buttered noodles.
