Ingredients

  • 1 Tbsp. flour
  • 1 lb. beef sirloin, cut into 1/4-inch strips
  • 1/2 c. chopped onion
  • 2 Tbsp. butter
  • 1 1/4 c. beef stock or condensed beef broth
  • 1/2 tsp. butter
  • 1 c. thinly sliced mushrooms
  • 1 clove garlic, minced
  • 3 Tbsp. flour
  • Salt

Instructions

  1. Combine 1 tablespoon flour with salt.
  2. Dredge beef sirloin strips in the flour mixture.
  3. Heat a skillet and add 2 tablespoons butter.
  4. When the butter is melted and hot, add the sirloin strips and brown quickly, flipping to cook all sides.
  5. Add sliced mushrooms, chopped onions, and minced garlic to the skillet.
  6. Cook for 3 to 4 minutes until the onion is barely tender.
  7. Remove the meat and mushrooms from the skillet and set aside.
  8. Add 2 tablespoons butter to the pan drippings.
  9. When melted, blend in 3 tablespoons flour and slowly add tomato paste.
  10. Pour in the beef stock or broth and stir until the mixture thickens.
  11. Return the meat and mushrooms to the skillet and stir in sour cream and sherry.
  12. Heat briefly until warmed through.
  13. Keep warm over hot water until ready to serve.
  14. Serve over hot buttered noodles.
