Ingredients

  • 3 beef shanks
  • 3 large celery stalks with leaves
  • 2 large carrots
  • 2 medium potatoes
  • 1 large onion
  • 2 Tbsp. oil
  • 2 Tbsp. paprika
  • 1 (8 1/4 oz.) can tomatoes
  • 2 tsp. salt
  • 1/4 cup chopped parsley

Instructions

  1. In a Dutch oven, brown beef shanks in hot oil until browned on all sides.
  2. Remove meat and bones to a plate.
  3. In the remaining drippings, cook the onion until tender.
  4. Stir in paprika and cook for 1 minute.
  5. Return beef and bones to the Dutch oven.
  6. Add celery, carrots, tomatoes with their liquid, salt, and 5 cups of water to boiling.
  7. Reduce heat to simmer and cover.
  8. Cook for 40 minutes.
