Claybourne Oven Pancake

Ingredients

  • 1/2 cup milk
  • 2 eggs
  • pinch of salt
  • pinch of sugar
  • 1 cup flour
  • 1/2 stick margarine
  • powdered sugar
  • lemon juice

Instructions

  1. Preheat an 8 or 10-inch cast-iron skillet in a 425°F oven.
  2. In a bowl, stir together milk, eggs, salt, sugar, and flour.
  3. Melt margarine in the hot skillet.
  4. Pour the batter into the hot skillet.
  5. Bake for 15 minutes at 425°F until puffed and golden.
  6. Remove from oven and sprinkle powdered sugar on top.
  7. Drizzle with lemon juice before serving.
