Ingredients

  • 2 large eggs
  • 1/4 cup butter or margarine, melted
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup sugar
  • 1/2 cup cocoa
  • 1/2 cup chopped walnuts
  • 1/4 cup semi-sweet chocolate mini morsels
  • vanilla ice cream
  • Chocolate Peppermint Sauce
  • crushed pineapple candy

Instructions

  1. Combine eggs, melted butter, and vanilla extract in a mixing bowl.
  2. Beat at medium speed with an electric mixer until foamy, about 2 minutes.
  3. Add buttermilk to the mixture, mixing well.
  4. Prepare the waffle batter by combining flour, baking powder, baking soda, salt, nutmeg, sugar, cocoa, chopped walnuts, and mini chocolate morsels in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour batter into a preheated waffle iron and cook until golden brown and crisp.
  7. Serve waffles topped with vanilla ice cream, drizzled with Chocolate Peppermint Sauce, and garnished with crushed pineapple candy.
