Ingredients

  • 2 chicken breast halves, cooked and cut up
  • 6 c. finely shredded lettuce
  • 1/4 c. crumbled Blue cheese
  • 8 slices bacon, cooked and crumbled
  • 4 green onions (with tops), sliced
  • 3 hard-cooked eggs, chopped
  • 2 medium tomatoes, chopped
  • 1 avocado, peeled and sliced
  • Lemon Vinaigrette

Instructions

  1. Divide the shredded lettuce among 4 plates.
  2. Arrange the cooked and chopped chicken, crumbled blue cheese, crumbled bacon, sliced green onions, chopped hard-cooked eggs, chopped tomatoes, and sliced avocado in rows over the lettuce on each plate.
