Ingredients

  • 2 cups sugar
  • 4 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup chopped black walnuts
  • 2 teaspoons coconut flavoring
  • 1 cup oil
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1 cup flaked coconut

Instructions

  1. Combine sugar, oil, and beaten eggs; beat well.
  2. Combine dry ingredients: flour, salt, baking powder, and soda.
  3. Add the sugar mixture alternately with buttermilk, beating well after each addition.
  4. Stir in chopped black walnuts, coconut flavoring, and flaked coconut.
  5. Pour batter into a well-greased and floured 10-inch tube pan.
  6. Bake at 325°F (163°C) for 1 hour and 5 minutes, or until the cake tests done.
  7. Pour hot Coconut Syrup over the hot cake.
  8. Leave cake in the pan for at least 4 hours before serving.
