Ingredients

  • 1 c. Wesson (canola) oil
  • 1 c. brown sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 c. white sugar
  • 2 c. all-purpose flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 2 c. coconut
  • 2 c. Wheaties

Instructions

  1. Dissolve the brown sugar in the Wesson oil, then add vanilla, eggs, and white sugar.
  2. In another bowl, combine the all-purpose flour, soda, salt, baking powder, coconut, and Wheaties.
  3. Add the wet ingredients from the first bowl to the dry ingredients; mix well with a spoon or fork.
  4. Roll the mixture into large, marble-sized balls and place them on an ungreased cookie sheet.
  5. Bake at 357°F (181°C) for 10 to 12 minutes.
