Ingredients

  • 2 lb. cod fillets
  • 3 Tbsp. lemon juice
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 carrots, coarsely shredded
  • 1 large stalk celery, finely chopped
  • 1 onion, chopped
  • 5 slices bread, crusts removed and cubed
  • 1/2 c. margarine, melted
  • 1/2 tsp. salt
  • 1/2 tsp. ground sage
  • 1/2 tsp. ground thyme
  • 3 Tbsp. dry bread crumbs
  • 2 Tbsp. snipped parsley

Instructions

  1. If fish fillets are large, cut into serving pieces.
  2. Arrange fish in an ungreased oblong or square baking dish.
  3. Sprinkle the fish with lemon juice, 1 1/2 teaspoons salt, and pepper.
  4. Mix shredded carrots, chopped celery, chopped onion, bread cubes, melted margarine, 1/2 teaspoon salt, sage, and thyme.
  5. Spread the vegetable mixture evenly over the fish.
  6. Mix bread crumbs, snipped parsley, and paprika; sprinkle over the vegetables.
  7. Cover and bake in a 350°F oven until the fish flakes easily with a fork.
