Ingredients
- 2 lb. cod fillets ⓘ
- 3 Tbsp. lemon juice ⓘ
- 1 1/2 tsp. salt
- 1/8 tsp. pepper ⓘ
- 2 carrots, coarsely shredded ⓘ
- 1 large stalk celery, finely chopped ⓘ
- 1 onion, chopped ⓘ
- 5 slices bread, crusts removed and cubed ⓘ
- 1/2 c. margarine, melted ⓘ
- 1/2 tsp. salt ⓘ
- 1/2 tsp. ground sage
- 1/2 tsp. ground thyme ⓘ
- 3 Tbsp. dry bread crumbs ⓘ
- 2 Tbsp. snipped parsley ⓘ
Instructions
- If fish fillets are large, cut into serving pieces.
- Arrange fish in an ungreased oblong or square baking dish.
- Sprinkle the fish with lemon juice, 1 1/2 teaspoons salt, and pepper.
- Mix shredded carrots, chopped celery, chopped onion, bread cubes, melted margarine, 1/2 teaspoon salt, sage, and thyme.
- Spread the vegetable mixture evenly over the fish.
- Mix bread crumbs, snipped parsley, and paprika; sprinkle over the vegetables.
- Cover and bake in a 350°F oven until the fish flakes easily with a fork.
