Codfish Casserole

Ingredients

  • 2 lb salted cod
  • 6 large potatoes
  • 1 can chickpeas
  • 2 eggs
  • 1 onion
  • 3 Tbsp olive oil
  • 2 tsp parsley
  • 2 Tbsp liquid crushed red pepper

Instructions

  1. Soak salted cod in water for 24 hours, changing the water 3 or 4 times.
  2. Drain the soaked cod and cook it until tender, then flake into pieces.
  3. Peel and slice the potatoes into thin rounds.
  4. Chop the onion finely.
  5. Heat 3 tablespoons of olive oil in a large skillet or casserole dish.
  6. Sauté the chopped onion until translucent.
  7. Add the cooked cod to the skillet and mix well.
  8. Layer the sliced potatoes over the cod and onion mixture.
  9. Drain and rinse the chickpeas, then add them to the dish.
  10. Slice the hard-boiled eggs and arrange on top.
  11. Sprinkle with parsley and crushed red pepper.
  12. Cover and bake or simmer until potatoes are tender and flavors meld.
