Ingredients

  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup melted butter
  • 1/4 cup instant coffee
  • 2 tablespoons water
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 1/2 cup dark raisins
  • 1 cup pecans

Instructions

  1. Cream sugar and melted butter together.
  2. Add beaten eggs and mix well.
  3. Add flour, baking powder, and salt; mix until combined.
  4. In a small bowl, dissolve instant coffee in water.
  5. Add water, vanilla, and coffee mixture to the batter and mix thoroughly.
  6. Fold in raisins and chopped pecans.
  7. Grease a baking pan and spread the batter evenly.
  8. Bake at 350°F (175°C) for 15 to 20 minutes until golden.
  9. Allow to cool, then cut into bars.
