Ingredients

  • 4 slices bacon
  • 4 (6 oz.) sliced mushrooms
  • flour
  • salt
  • pepper
  • 2 cloves garlic, crushed
  • 1 1/2 Tbsp. parsley
  • 1 1/2 c. white wine
  • 6 to 8 pearl onions
  • 6 to 8 boneless chicken breasts
  • 6 Tbsp. butter
  • 3/4 tsp. tarragon

Instructions

  1. Fry bacon until crisp, then drain and crumble.
  2. In a bit of bacon grease, sauté onions and mushrooms until browned, then remove from pan.
  3. Lightly dredge chicken breasts in flour, salt, and pepper.
  4. Add butter to the frying pan and brown the chicken on all sides.
  5. Transfer chicken to a casserole dish and sprinkle with crushed garlic, tarragon, thyme, and parsley.
  6. Add cooked bacon, sautéed onions and mushrooms to the casserole.
  7. Pour white wine over the ingredients in the casserole.
  8. Cover and bake at 350°F for one and a half hours.
