Cold Gazpacho

Ingredients

  • 1 lb. ripe tomatoes
  • 1 green pepper
  • 1 cucumber
  • 1 medium onion
  • 1 crushed garlic clove
  • 1 egg
  • 2 Tbsp. wine vinegar or lemon juice
  • 4 Tbsp. olive oil
  • 1 c. tomato juice
  • salt and pepper to taste

Instructions

  1. Skin tomatoes by plunging them into boiling water for 1 to 2 minutes.
  2. Then plunge them into cold water and peel off skins.
  3. Place peeled tomatoes in a blender.
  4. Remove seeds from the green pepper, chop, and add to the tomatoes.
  5. Peel and chop the cucumber and onion.
  6. Add the cucumber, onion, garlic, and egg to the blender.
  7. Measure and add the remaining ingredients: wine vinegar or lemon juice, olive oil, and tomato juice.
  8. Cover and blend thoroughly until smooth.
  9. Add cold water to thin the soup to desired consistency.
  10. Pour the gazpacho into a bowl.
  11. Serve immediately.
