Cold Pennies are tangy, sweet carrot salads with a flavorful tomato dressing, perfect for summer gatherings or as a refreshing side dish for any occasion.

Ingredients

  • 2 lb. carrots
  • 1 medium onion
  • 1 c. sugar
  • 1 medium green pepper
  • 3/4 c. vinegar
  • 2 c. tomato juice
  • 1/2 c. oil
  • 1 tsp. dry or prepared mustard
  • 1 tsp. Worcestershire sauce
  • salt
  • pepper

Instructions

  1. Pare and slice carrots. Boil in salted water until tender. Drain and let cool slightly.
  2. Sprinkle chopped onion and green pepper over carrots in a serving dish.
  3. Make the topping by bringing tomato juice, oil, sugar, vinegar, mustard, Worcestershire sauce, salt, pepper, and garlic powder to a boil.
  4. Pour the hot topping over the carrots and chill. Marinate overnight for best flavor.
  5. Drain the carrots before serving. Serve cold.
