Cold Spiced Carrots

Ingredients

  • 2 lb. carrots, sliced like coins
  • 2 medium onions, sliced thinly
  • 2 green peppers, sliced into rings or strips
  • 1 can condensed tomato soup or substitute 1 1/2 c. homemade tomato sauce for fresher flavor
  • 3/4 c. sugar
  • 1/3 c. vinegar (cider vinegar preferred)
  • 1/2 c. salad oil
  • 1 Tbsp. prepared mustard

Instructions

  1. Briefly cook the carrot coins by the desired method.
  2. Drain well and mix with raw onions and pepper strips.
  3. Place in a nonmetallic bowl with lid.
  4. Use a wire whisk and electric blender or food processor to combine soup, sugar, vinegar, oil and mustard.
  5. Pour over vegetables.
  6. Cover and marinate overnight. Makes 10 servings.
