Cold Spiced Carrots
Ingredients
- 2 lb. carrots, sliced like coins ⓘ
- 2 medium onions, sliced thinly ⓘ
- 2 green peppers, sliced into rings or strips ⓘ
- 1 can condensed tomato soup or substitute 1 1/2 c. homemade tomato sauce for fresher flavor ⓘ
- 3/4 c. sugar ⓘ
- 1/3 c. vinegar (cider vinegar preferred) ⓘ
- 1/2 c. salad oil ⓘ
- 1 Tbsp. prepared mustard ⓘ
Instructions
- Briefly cook the carrot coins by the desired method.
- Drain well and mix with raw onions and pepper strips.
- Place in a nonmetallic bowl with lid.
- Use a wire whisk and electric blender or food processor to combine soup, sugar, vinegar, oil and mustard.
- Pour over vegetables.
- Cover and marinate overnight. Makes 10 servings.
