Ingredients

  • 1 lb. butter, softened
  • 2 cups sugar
  • 1 tablespoon vanilla
  • 2 cups flour
  • 1 cup cornmeal
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 12 eggs
  • 1 tablespoon lemon juice or 1/4 cup rum
  • 1 cup raisins

Instructions

  1. In a large mixing bowl, mix butter, sugar, and vanilla until smooth and creamy.
  2. In another bowl, combine flour, cornmeal, salt, cornstarch, and baking powder.
  3. Add dry ingredients and eggs to the butter mixture, alternating 1/2 cup of dry ingredients and 2 eggs, mixing well after each addition until smooth and creamy.
  4. Mix in lemon juice or rum and raisins.
  5. Grease two 9 x 13-inch pans or one 9 x 13-inch and two 8 x 8-inch square pans.
  6. Pour batter into pans about 2/3 full.
  7. Bake at 325°F for 60 minutes, until a toothpick inserted comes out clean.
