Ingredients

  • 10 oz. cream of onion soup
  • 1 cup shredded Cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 3 Tbsp. margarine
  • 1/2 cup bread crumbs
  • 10 oz. frozen cauliflower, cooked
  • 9 oz. frozen peas and carrots
  • 1/4 cup chopped pimento
  • 3 oz. sliced mushrooms
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, combine cream of onion soup, shredded Cheddar cheese, mayonnaise, and milk; mix well.
  3. Fold in cooked cauliflower, frozen peas and carrots, chopped pimento, and sliced mushrooms.
  4. Turn the mixture into a 1 1/2-quart baking dish.
  5. In a small saucepan, melt margarine; stir in bread crumbs and Parmesan cheese.
  6. Sprinkle the bread crumb mixture over the casserole.
  7. Bake uncovered for 35 to 45 minutes until bubbly and golden.
