- Preheat oven to 375°F.
- In a large bowl, combine cream of onion soup, shredded Cheddar cheese, mayonnaise, and milk; mix well.
- Fold in cooked cauliflower, frozen peas and carrots, chopped pimento, and sliced mushrooms.
- Turn the mixture into a 1 1/2-quart baking dish.
- In a small saucepan, melt margarine; stir in bread crumbs and Parmesan cheese.
- Sprinkle the bread crumb mixture over the casserole.
- Bake uncovered for 35 to 45 minutes until bubbly and golden.
