Copper Carrots offer a sweet and tangy carrot salad with onions and green peppers, marinated in a flavorful tomato-based dressing—perfect for summer gatherings or as a side dish.

Ingredients

  • 2 lb. peeled carrots
  • 1 large onion, sliced thin
  • 1 green pepper, sliced
  • 10 1/2 oz. can tomato soup
  • 1 cup sugar
  • 1 cup oil
  • 3/4 cup vinegar
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Cut carrots crosswise into 1/4-inch rings and cook in boiling water until barely done.
  2. Drain and place in a large bowl.
  3. Separate onion slices into rings; add with green pepper to the carrot mixture.
  4. Combine tomato soup, sugar, oil, vinegar, mustard, salt, and pepper in a blender.
  5. Pour the dressing over the vegetables.
  6. Marinate in the refrigerator overnight.
